Enjoy your summer corn-ucopia all year long

Learn how to safely preserve fresh, local foods when the OSU Extension Service in Newport continues its Home Food Preservation Program workshops through the summer.

Following a full slate of sold-out spring classes, the Lincoln County program returns with hands-on sessions designed to help home cooks make the most of seasonal ingredients, whether from backyard gardens, farmers markets or the local dock. Each class offers practical instruction using current research-based methods, with participants taking home items they prepare themselves.

Upcoming workshops include a hands-on strawberry-lemon marmalade class on Friday, June 12. Gain the knowledge and skills to safely preserve fruit spreads at home, using the water-bath canning method and strawberry-lemon marmalade as the example.

On Wednesday, July 22, a class titled “You Can (Pressure) Can Corn!” will show how to safely pressure can low-acid vegetables at home.

The series concludes on Saturday, Aug. 15, with the very popular hands-on pressure-canned tuna workshop paired with a custom Shop at the Dock tour.

Workshop participants will receive fresh frozen tuna, hands-on instruction using current research-based preservation methods, printed recipes and follow-up resource materials. The class also includes light tastings, beverages and a custom Shop at the Dock tour with transportation between the OSU Extension office and the docks.

Guests interested in purchasing seafood during the optional dock tour are encouraged to bring cash along with a cooler and ice for transport.

Each participant will take home approximately one pound of tuna they canned themselves.

Classes are designed for all experience levels, from beginners learning the basics to those looking to refresh or expand their skills.

Workshops are held at the OSU Extension Service office, located at 1211 SE Bay Boulevard in Newport and require pre-registration. Fees range from $20 to $50 depending on the class.
